Chef Helony Lakhani, founder of Bake Studio Mumbai, is known for creating luxury wedding and celebration cakes that beautifully combine artistic design, structural precision, and refined flavors. Recognized among Mumbai’s Top 50 Bakers and a Silver Medalist at the Cakeology Wedding Cake Category, he brings nearly seven years of experience in crafting bespoke cakes that are both visually striking and gastronomically memorable. Through Bake Studio, Helony transforms celebrations into edible works of art where storytelling, craftsmanship, and flavor come together seamlessly.

When did you start your journey as a chef?

My journey into baking began when I was in the 12th grade. My mother had a strong interest in baking and would often attend baking classes. Watching her learn and experiment sparked my own curiosity, and I gradually developed a deep passion for the craft.

Over time, I trained under several renowned mentors including Sunita Lobo, Zulekha Badar, Gitika Abbott, and Chef Samie along with learning from various international chefs. I also completed a cake artist course at Sugar Sculpt Academy.

I strongly believe that mentorship and structured learning are extremely important in mastering this craft, which is why I value the guidance I have received from different teachers throughout my journey.

Today, with around six to seven years of experience in the industry, I run Bake Studio in Mumbai, specializing in luxury wedding cakes, sculpted designer cakes, and bespoke celebration cakes.

Over the years, I have also worked on large-scale projects, including a 10-foot wedding cake for a destination wedding in Agra, and a chandelier cake collaboration where I worked as a sous chef. These experiences have helped shape my approach to combining creative design with technical precision in cake artistry.

I also have been awarded as Mumbai top 50 bakers. I have been a silver medalist at Cakeology event in wedding cake category

Your philosophy suggests that design is “intelligence made visible and edible.” How do you translate artistic vision, structural engineering, and flavor harmony into a cake that is not only visually stunning but also gastronomically memorable?

At Bake Studio, every cake begins as a design concept before it becomes a dessert. We approach cake creation much like a piece of architecture, where aesthetics, structure, and function must coexist.

The artistic vision defines the visual language of the cake — its form, palette, textures, and emotional tone. Structural planning then ensures that the design remains stable, especially in multi-tiered or sculptural cakes. Careful internal support systems, precise tier proportions, and weight distribution allow us to bring even ambitious designs to life while maintaining elegance and balance.

Equally important is the flavor architecture. A cake should not only look extraordinary but also create a memorable experience when tasted. At Bake Studio, we focus on balancing sweetness, richness, and texture so that each bite feels layered and refined. Some of our most loved flavors include caramel and salted caramel cakes, which remain among our best-selling creations, along with fruit-forward combinations like raspberry and cherry compote that add brightness and depth.

Ultimately, the goal is harmony — where design, structure, and flavor come together to create a cohesive and memorable experience.

Wedding and celebration cakes often become emotional centerpieces of an event. How do you interpret a client’s personal story or celebration narrative and transform it into an edible design language?

At Bake Studio, every cake begins with understanding the story behind the celebration. When working with couples or clients, we spend time learning about their vision for the event, the aesthetic of the venue, and the elements that are meaningful to them.

These details become our design vocabulary. Colors from the wedding palette, textures inspired by the venue, or subtle decorative elements that reflect shared memories can all influence the final design.

Our aim is not simply to create a beautiful cake, but to craft something that feels deeply personal to the celebration. The cake should feel like it belongs to that moment — something guests instantly associate with the story being celebrated.

In the world of luxury and exotic cakes, where aesthetics often dominate, how do you maintain a thoughtful balance between architectural design, flavor depth, and textural sophistication?

Luxury cakes often capture attention because of their visual impact, but at Bake Studio we believe that taste must always remain central to the experience.

While we explore sculptural forms and intricate finishes, we simultaneously focus on thoughtful flavor pairing and texture. Soft sponge layers, silky fillings, fruit compotes, and delicate crunch elements help create contrast and depth.

The balance lies in restraint and precision. Not every design element needs to be dramatic, and not every flavor needs to be overly complex. Sometimes sophistication comes from simplicity executed perfectly. By ensuring that the culinary experience matches the visual elegance, the cake becomes memorable for both its appearance and its taste.

Customization lies at the heart of your creations. From concept to final execution, what intellectual or creative process guides you in transforming a client’s abstract idea into a refined edible masterpiece?

Our process at Bake Studio follows a structured yet creative journey.

It begins with a discovery conversation, where we understand the client’s vision, the nature of the celebration, and the overall aesthetic direction. From there, we translate those ideas into a conceptual design by exploring shapes, textures, and decorative techniques.

Once the concept is finalized, we move into the technical stage — planning the structure, tier proportions, and internal supports required for stability. Finally, the cake is crafted with precision so that the finished piece reflects both the visual concept and the chosen flavor profile.

By combining creative intuition with technical planning, we are able to transform abstract ideas into refined edible works of art.

As cake artistry increasingly overlaps with fashion, sculpture, and experiential dining, how do you see the future of celebratory cakes evolving in terms of design philosophy, scale, and storytelling?

The future of celebratory cakes is moving toward a more immersive and artistic direction. Cakes are increasingly drawing inspiration from couture fashion, sculpture, and architecture, turning them into statement pieces within an event.

Rather than being simply a dessert, the cake is becoming an integral part of the visual identity of a celebration. We see this evolution leading to more sculptural designs, larger-scale installations, and cakes that tell a deeper story through form, texture, and detail.

At Bake Studio, we believe celebratory cakes will continue to evolve into edible art pieces — creations that combine craftsmanship, storytelling, and flavor to create a truly memorable experience for the guests.
